Flying Squirrel Pizza Co. is located in a trendy residential neighborhood in downtown Seattle, WA (editor’s note: they now have three locations in the Seattle area). They offer many local craft beers and wines in a pleasant, low key bar setting. The pizza was very good, offering a light airy outer crust and thin inner crust. Flying Squirrel applies a minimum amount of a simple, but tasty, sauce and a well portioned amount of cheese. I chose Italian sausage as my topping and it was spicy and flavorful. The pizza was fairly greasy, which can be looked at as a positive or negative, depending on ones taste. The only negative aspect, of this local favorite, is that they offer pizza in one size, a large 16”. If you are dining solo, it is too much for one person and you will certainly leave with leftovers. The other down side for Flying Squirrel is that it is only reachable by cab, if you are staying downtown. Overall I would recommend visiting this pizzeria if you are someone that seeks local flavor for beer, wine, and of course, pizza.
